One month until the grand opening of FZN at Atlantis The Palm: Reservations now open
FZN, the sibling restaurant to the three-Michelin-starred Frantzén in Stockholm and Zén in Singapore, opens in Dubai on November 8th. Chef Björn Frantzén has a total of six Michelin stars, and FZN will be his first fine dining establishment in the Middle East.
Atlantis The Palm is joining forces with the Frantzén Group to open an intimate 27-seat fine dining concept. This new restaurant, FZN, will offer a tasting menu combining modern European fine dining with Japanese influences.
FZN shares the same design DNA as its sibling restaurants, Frantzén and Zén, focused on Swedish craftsmanship and legacy. Designed in collaboration with Bishop Design, the restaurant features a gold-accented hallway where guests take the elevator to a luxurious living room designed like an elegant apartment, serving as the starting and ending point of their visit. For those wishing to extend their experience, the terrace offers stunning views of the Dubai skyline.
The dining room accommodates 27 guests, with an open kitchen for a front-row view of the culinary craftsmanship. Here, the service team guides diners through a nine-course meal featuring dishes like Duck “BBQ” with yuzu, Kampot pepper, and foie gras; Chawanmushi with smoked beef broth and “Frantzén selection” caviar; and turbot with Cecina de wagyu, barigoule, and pine shoot.
Crafted with Frantzén’s innovative techniques and the finest seasonal ingredients from across the globe, the menu also highlights locally sourced herbs, dairy, vegetables, and edible flowers. Guests can anticipate an exploration of Nordic flavors, with ingredients such as Norwegian king crab and langoustines reimagined in Frantzén’s distinctive style.
To elevate the tasting menu, dishes will be paired with a selection of over 1,200 wines, including smaller producers and internationally established labels. FZN will also offer a non-alcoholic pairing, developed by the Frantzén Group over the past decade. Guests can choose between a wine pairing, a non-alcoholic pairing, a combination of both, or wines by the glass.
FZN has enlisted a diverse team representing 20 different nationalities, led by General Manager Karin Ågren. Karin, who has been with the Frantzén Group for seven years, was also part of the management team at Frantzén in Stockholm. Executive Chef Torsten Vildgaard, whose impressive background includes opening his own Michelin-starred restaurant and over a decade at the world-renowned three-Michelin-starred Noma in Denmark, will oversee the kitchen. FZN will be one of two new restaurants opening at Atlantis The Palm, with the social dining concept Studio Frantzén also set to debut this fall.
