The new Frantzén opens on August 30, 2017.

During summer 2016, chef and restaurateur Björn Frantzén closed his two-star restaurant Frantzén in Gamla Stan to move to new premises. On August 30, the new restaurant will be opening its doors at Klara Norra Kyrkogata 26, in downtown Stockholm.

The new restaurant, with three floors plus a terrace, has undergone complete reconstruction since the takeover. Despite the surface area now being five times as large as the previous restaurant, the number of guests it can seat is still the same – 23.

“I don’t know of any other restaurant in the world that looks anything like what we’re creating here”, says Björn Frantzén. “A visit to Frantzén will be a culinary experience as well as a journey through a completely renovated 19th century building, with the addition of a lift just for the restaurant. The restaurant takes up a full three floors, with an entrance area, restaurant and a former attic on the top floor which is now a lounge area.”

While the rebuilding work has been underway, Frantzén’s test kitchen has been a hive of activity, with the staff working hard to create dishes for the new restaurant menu.

“The new Frantzén has the same gastronomic approach and philosophy as the previous restaurant”, says Björn Frantzén. “The major difference is having access to a range of techniques we couldn’t previously use due to a lack of space in the kitchen, such as cooking over an open fire. But our primary goal with the new Frantzén is to create an overall experience that simply wasn’t possible in the old premises.”

New Frantzén has been created as a collaboration with Swedish interior designers Joyn Studio. The restaurant will be run by Björn Frantzén and head chef Marcus Jernmark. Carl Frosterud, who previously worked at the Operakällaren, will be in charge of the dining room, and head sommelier is Anna Rönngren.

Reservations for the new Frantzén will be available from June 30, at 10 AM CET.
