The Frantzén Group, led by noted Swedish chef Björn Frantzén, premieres Brasserie Astoria, a distinctly international twist on the traditional brasserie experience set in the grandeur of the Victoria Concert Hall. Set to debut on 25 July 2023, Brasserie Astoria is now open for reservations. It houses 100 seats, a private dining room for 10, and a bar and lounge that seats 22 people. This is the Frantzén Group’s second foray into Singapore since its three-Michelin-star fine dining restaurant Zén opened in November 2021.
This new, more casual Singapore outpost is Brasserie Astoria’s first outside of Sweden. It mirrors its Stockholm flagship that occupies what was once Astoria Cinema. The Swedish building, which dates back to the 1870s, was carefully restored, recalling a time when Stockholmers, eager to escape the harsh realities of war and depression in the 1920s, flocked here to entertain and socialise. This rich history, elegant design and Brasserie Astoria’s peerless hospitality have turned it into a sought-after dining destination for locals and tourists alike.
In similar fashion, Singapore’s Brasserie Astoria is set to bring back the spirit of grand dining halls to Singapore with flambe trolleys, tableside service, and Chef Frantzén’s unique spin on classic brasserie fare. The dining room is amped up with high energy supplied by an infectious playlist curated by Chef Frantzén and DNA Director Stefan Gissberg.
Diners can expect an extensive à la carte menu executed by Singaporean Head Chef and Zén alum Emil Cecil Ess. Dishes include Råraka, the Swedish answer to rösti, featuring crisp Agria potatoes topped with vendace roe, and Toast Astoria, a nod to traditional Swedish Toast Skagen with mounds of Baltic prawns and Norwegian king crab dressed with wasabi aioli and served atop crisp sourdough. Brasserie Astoria will also offer an extensive wine list and unique cocktail menu featuring Nordic focus and Asian influences.
Chef Frantzén said: “Following the success of Zén, we are excited to bring the more casual and accessible Brasserie Astoria to Singapore’s incredible dining scene. We are looking forward to unveiling another facet of the Frantzén Group’s culinary creativity to this food-loving city.”
