Some fresh fish benefit greatly from hanging and maturation. This is actually quite recent knowledge and innovation.
Our hiramasa is from Denmark. It’a a farm-elevated fish with an incredibly fleshy structure, comparable to sturgeon or salmon.
The fat is delicate in all its abundance. We trim it and gut it, then age it in a cool cabinet for at least a week. The structure tightens further; the flavors blossom.
